<p>INGREDIENTS:</p>
<p>3 cups Rotini pasta, cooked according to package</p>
<p>1 pound ground turkey sausage</p>
<p>3 celery stalks, chopped</p>
<p>1 onion, chopped</p>
<p>1 small zucchini, quartered and sliced</p>
<p>2 cans diced tomatoes with green chilies (do not drain)</p>
<p>1 can tomato sauce</p>
<p>1 tsp. dried basil</p>
<p>1 cup shredded part-skim mozzarella cheese</p>
<p>DIRECTIONS:</p>
<p>Cook pasta according to package directions.  Drain.  Meanwhile, in large pan cook turkey sausage, onions, and celery until tender and sausage is no longer pink.  Add zucchini, diced tomatoes, tomato sauce, and basil.  Bring to boil and simmer uncovered about 10 mins.  Reduce heat to Low.  Add cooked pasta.  Sprinkle with mozzarella cheese and cover pan to allow cheese to melt.</p>

<p>INGREDIENTS:</p>
<p>1 (8oz) package Penne Pasta</p>
<p>1 pound fresh asparagus, trimmed and cut into bite sized pieces</p>
<p>1/2 pound fresh sugar snap pees, trimmed</p>
<p>3 Tbl. Olive Oil</p>
<p>1/2 Cup reduced-fat grated parmesan cheese</p>
<p>DIRECTIONS:</p>
<p>Bring large pot of water to a boil.  Add asparagus and continue boiling about 2 minutes.  Add peas and boil an additional 2 mins.  Transfer veggies to large bowl and set aside.  Add pasta to pot of boiling water and cook 8-10 mins or until pasta is al dente.  Drain.  Toss pasta with veggies and olive oil.  Top with parmesan cheese.</p>

<p>INGREDIENTS:</p>
<p>6 oz. Angel Hair Pasta</p>
<p>6 oz. Fresh sliced mushrooms</p>
<p>1 garlic clove, minced</p>
<p>1 Tbl. Olive oil</p>
<p>1/4 C. low-sodium chicken broth</p>
<p>1/2 C. half and half</p>
<p>1/2 onion, finely chopped</p>
<p>2 Tbl. grated Parmesan Cheese</p>
<p>DIRECTIONS:</p>
<p>Cook pasta al dente according to package directions.  Drain and set aside.  Saute onion and garlic in olive oil over medium heat until onions become slightly tender.  Add mushrooms and continue to saute 2-3 min.  Add Chicken broth and continue to cook until liquid is reduced by half.  Stir in half and half.  Continue to cook until reduced to desired thickness.  Toss pasta with sauce and top with Parmesan cheese.</p>

<p>INGREDIENTS:</p>
<p>12 oz. Bow Tie pasta, cooked al dente</p>
<p>1/4 C. Low-Sodium Vegetable Broth</p>
<p>2 garlic cloves, minced</p>
<p>1/2 onion, chopped</p>
<p>1/4 tsp. Cayenne Pepper</p>
<p>1 large eggplant, peeled and chopped</p>
<p>2 cans diced tomatoes (any variety)</p>
<p>1 tsp. dried basil</p>
<p>1/2 tsp. dried oregano</p>
<p>1 Tbl. Parmesan Cheese (optional)</p>
<p>DIRECTIONS:</p>
<p>Cook pasta al dente, drain and set aside.  Simmer garlic, onion, and cayenne in vegetable broth until onions begin to soften (about 5 mins).  Add eggplant, tomatoes, and other spices.  Simmer 20 minutes until eggplant is tender.  Toss tomato mixture with cooked pasta.  Sprinkle with parmesan cheese (optional).</p>

<p>INGREDIENTS:</p>

<p>INGREDIENTS</p>
<p>1 opund lean ground turkey sausage</p>
<p>1 Cup Egg Beaters (or other egg substitute, or 8 egg whites)</p>

<p>1 Cup Shredded sharp cheddar cheese</p>
<p>Salt and Pepper to taste</p>

<p>Preheat oven to 350 degree.</p>
<p>Brown turkey sausage in large skillet until no longer pinkl.  Drain and Crumble.  In large bowl, mix together all of the ingredients.  Pour into a 9X13 inch baking dish.  Bake at 350 degrees for 60 minutes.</p>
