Fast Rice and Black Bean Quesadillas

Easy and very filling Quesadillas!
INGREDIENTS
1 package Uncle Ben’s Spanish Rice, cooked according to directions (I like the 90 second microwavable package!)
1 can Black Beans, drained and rinsed
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1/4 cup chopped onion
1 cup shredded cheese (or cheese substitute)
10 whole wheat tortillas
DIRECTIONS
In medium bowl, mix together all ingredients, except tortillas. Spray large pan or griddle with non-stick cooking spray, and allow surface to warm. Place tortilla in pan and top with enough of mixture to cover most of the surface. Top with tortilla. Cook until tortilla begins to brown. Flip and cook other side until it begins to brown. Makes 5 (rather large) quesadillas!

Megan, we need good fast recipes for lowering cholesterol.
Or to maintain good and healthy cholesterol.
I’m tired of cooking. Who needs to eat anyway.
Well, once in awhile I guess we need to eat.
